chili basil chicken
running pretty low on groceries, hmmm what could i whip up tonight? quick scan of the pantry and fridge: chicken, shitake mushrooms, beech mushrooms, and some about-to-go-old broccoli. ok, well that sounds like it can work. here is some leftover basil from the vietnamese hot and sour, now lets just add some spice.
i made a garlic/pepper paste out of a habanero and 5 cloves of garlic (you make a paste by finely chopping the ingredients, then adding salt and grinding with a fork)
i sauteed the paste in some oil to get the flavor out, added cubes of chicken. when the chicken was about 1/2 way cooked, i threw in the boiled broccoli (to get it soft) and the mushrooms. i also added some fish sauce, soy sauce, cracked pepper and a touch of sugar. let it all finish cooking and threw in 2 handfulls of basil right at the end.
served over a bed of brown rice (cooked in beef broth and butter).
