bacon & egg breakfast pho
reminiscing of my trip to japan, i miss being able to wake up, walk a block and order a japanese soup breakfast. i woke up this morning knowing exactly what i wanted – an asian style soup! having not done a substantial grocery shopping trip since march, i was limited to what i had available in the kitchen.
first i check on what noodles i have, nothing. i quickly rummage through the fridge and find a package of wonton skins, hmm, i can chop these up and use as noodles. i do have some bacon leftover from last week’s bacon takedown, and a container of homemade chicken stock made earlier this week. i think i have enough to start, let’s jam.
in a 3 qrt saucepan, i filled about 1/2 way with water. added chicken stock, salt, garlic powder, red pepper flakes, ground cayenne pepper. i then added hoisin sauce, beef flavor pho paste, garlic teriyaki, sesame seed oil & fish sauce. bring to a boil.
while the soup came to a boil, i fried 6 pcs of bacon, cook to al dente, not crispy.
i took 2 eggs and separated white from yolk (adding a pinch of salt to each). stir the boiling soup pot and while spinning, slowly pour the eggs in, whites then yolks. this way you get a nice color separation and can taste the 2 different parts of the egg.
rough chopped the bacon & add to soup. reduce the heat to medium.
then add 8 wonton skins, cut into strips, a sliced fresh jalapeno & simmer.
- 5 – 6 c. water
- 1 and 1/2 c. chicken stock
- tsp of salt or to taste
- 1 tsp garlic powder
- 1 tbsp red pepper flakes
- 1/2 tsp cayenne powder
- heaping tsp hoisin sauce
- heaping tsp beef pho paste
- 1 tsp garlic teriyaki
- 1/2 tsp sesame oil
- 1/2 tsp fish sauce
- 6 strips of bacon
- 8 wonton skins
- 2 eggs
- 1 fresh jalapeno
this is not a science, i literally grabbed items from my pantry and ‘splashed’ ingredients as i saw fit. this is as close as i can get to a recipe. use what you want and what sounds good to you. have fun!
i was surprised at how great this turned out, amazing flavor. awesome pick-me-up for breakfast and i still got in my bacon & eggs. next time i’ll try with a little tamarind and definitely would have liked lime.
